Caciocavallo Ragusano PDO

Ragusano is a Sicilian DOP (Protected Designation of Origin) cheese and one of the oldest and most famous cheeses in Sicily. It is a stretched-curd cheese made exclusively from cow's milk throughout the Province of Ragusa, as well as in the municipalities of Noto, Palazzolo Acreide, and Rosolini in the Province of Syracuse. For the product to be certified DOP, both its production and subsequent maturation must follow strict specifications.
