Canestrato Modicano

It has the same cylindrical shape, with surfaces showing the grooves left by the characteristic "baskets", equipment used during its production, with a thin straw-yellow rind in the fresh product, which allows the spice used in the product to be seen, and a flavor further enriched by the latter; the aged product, on the other hand, has a slightly thicker rind, with a stronger and spicier flavor.

Immediately after the initial stages of production and salting, the product will be prepared for aging, the process that will determine the product's variations.

We recommend storing the product in the refrigerator and bringing it to room temperature about half an hour before consumption.

INGR: cow's milk, mixed sheep and goat rennet and salt.
