Black Pecorino from Sicily

The Pecorino Nero di Sicilia is an outstanding sheep's milk cheese, known for its distinctive dark rind and bold flavor.
Its uniqueness lies not only in the paste, but in the treatment of the exterior: the rind is "cappata" (massaged by hand) with a mixture of extra virgin olive oil and ground black pepper, which gives it its typical grey-black or purple color and natural protection during maturation.
It is made with 100% sheep's milk (often raw) from local farms. It is extremely versatile in the kitchen.
